For this cake I have applied the Florence mesh stencil and have used pink ermine buttercream on vanilla ermine buttercream to achieve this effect.
I firstly crumb coated my cake, chilled it and did my final coat. I then chilled my cake thoroughly to ensure the buttercream was very firm. To do this, I put it in the freezer for 20 minutes.
Whilst the cake chilled, I mixed Cake Craft’s Ruby Rose gel colouring to my ermine buttercream and heated it in the microwave for 7 seconds so that it was thin and runny (but not hot).
I then took the cake out of the freezer and worked quickly as I used a spatula to smooth small amounts of the runny purple buttercream over the stencil and finished it by scraping it using a cake scraper.
